A chef who only cooks what he likes


"If they ask me for gratin scallops ... I'd rather say no, because this product has to be sincere, without sauces that detract from its flavor," explains Germán Muñoz, owner and chef of Sa Cuina de Mercat with a slight shrug. And judging from the way he does in his kitchen, he really enjoys preparing "what he does like." However, he assures, he respects anyone who wants to consume any product using the same principle: as he likes it.

This is why he does not have a letter but suggestions. At eight in the morning he is already in the Olivar market, which is providentially in front of him, to choose the products and ingredients with which he will prepare the dishes of the day.

From the Olivar market to Germán Muñoz's kitchen

Search among the stalls, look for the best product for each dish ... "For gazpacho, better very ripe tomatoes" he says "and fish every day except Monday, unless there is good cod." In its restaurant, diners can choose to take individual dishes or order to share. Vegetable creams, risottos, meats ... everything has a place, as long as it reflects the Mediterranean dyes of Mallorca and its native Andalusia.

At eight in the morning he is already in the Olivar market, which is providentially ahead.
