CG recommends: Es Brollador

Fava stop from 18 to 25 February

These days we will cook a dish that generations have eaten in Mallorca: Fava Parada.

The season of the last days (period before Shrove Thursday) was characterized by eating freely what was desired, as these are the days before Lent (time of abstinence and deprivation). So it was time to take advantage and eat fatty and hearty foods, as well as pork, brushing, potatoes and boiled of the fattest parts, like the stopped bean.

He took advantage of all that was left of the slaughter to cook what would provide energy to pass a less cumbersome Lent.

To stop, in classical Catalan, means to remove the skin, that is, to peel a fruit or a legume. In this case, it refers to the action of removing the skin from dried beans.

The godparents have told us that in Esporles the possessions, such as Son Dameto or Sa Granja, made a large amount of beans and that the people of the village could go there to eat. The only condition was hard plate and spoon.

In El Brollador we are part of the culinary tradition of Mallorca. We invite you to come and try and taste a tasty dish. There will already be time for Coremes, or not.
